I would get gas. Viking.
Depends on your cooking prowess. Convection ovens can be tricky because when you are following a recipe you have to adjust the temperature to account for the faster cooking times. Personally, as one who loves to cook and bake, I prefer a gas stove and an electric convection oven.
Think for a moment about the value of homes in your neighborhood, because though Viking gas ovens (as another reader suggested) are indeed wonderful, you may not get the value back if it isn't an upscale neighborhood, just as with other items in your home. Viking gas ovens are professional ovens, large and expensive. Chefs love them, but average cooks not so much. So in general, your best value would be to pick something nice... for your neighborhood... but not over the top.
DO get gas. Reason: Most cooks of all types prefer cooking on gas, and many who have cooked on gas never want to go back to electric.
Convection oven? A convection oven circulates air on the inside of the oven. Many professional kitchens have them, but i would agree that not all people like them (i have been a professional baker, and i don't care for them). They take getting used to, so perhaps, unless YOU plan on using it, it may not be your best choice.
So with all this in mind, how do you select an oven? I would go to your large appliance stores, find knowledgable staff, tell them about the home you're building and the neighborhood, and ask for recommendations. You can also, if you know a good realtor, ask them. Good realtors know the best choices for homes because they know what features help sell houses. They will also know in particular for your market what the preferences are. Also, check Consumer Reports at your library... they will let you know what features people are looking for and what the repair record is on particular models.
